Ingredients:

  • 4 sea bream fillets

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • 1 lemon, sliced for garnish



For the Villain Sauce:

  • 1/4 cup olive oil

  • 4 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 red chili pepper, finely chopped (adjust according to spice preference)

  • 1/2 cup white wine

  • 1 cup fish or seafood stock

  • 2 tablespoons tomato paste

  • 2 tablespoons chopped fresh parsley

  • Salt and pepper to taste

Instructions:

  1. Preheat the Silver Coast Grill: Preheat your Silver Coast Grill. Aim for medium-high heat on the plancha side and medium heat on the grill grate side.

  2. Prepare the Sea Bream: Pat the sea bream fillets dry with paper towels. Rub each fillet with olive oil and season with salt and pepper on both sides.

  3. Make the Villain Sauce: Heat olive oil in a saucepan on the grill grate. Add minced garlic, chopped onion, and red chili pepper. Sauté until the onions are translucent and fragrant, about 3-4 minutes.

  4. Stir in the white wine* and let it simmer for 2-3 minutes to reduce slightly.

  5. Add the fish or seafood stock and tomato paste to the saucepan, stirring well to combine. Simmer the sauce for another 5-7 minutes until it thickens slightly.

  6. Remove the saucepan from heat and stir in the chopped parsley. Season with salt and pepper to taste.

  7. Grill the Sea Bream: Place the sea bream fillets directly onto the preheated plancha side of your Silver Coast Grill. Grill for about 8-10 minutes, flipping halfway through, until the fish is cooked through and flakes easily with a fork.
